About the Technology
Rose is a highly nutritive flower with vitamin- C , carotenoids, phenolic components, anthocyanin and important minerals. Petals of Indian rose have been consumed for many years in many food products, e.g. gulkand, which is a sun cooked product and cured over a long period with just rose petals, candy sugar and some spices. The term ‘rose jam’ is sometimes synonymically used for the ‘rose gulkand’ but the manufacturing process of gulkand is entirely different from the conventional process for preparation of jam. Moreover, this process does not yield a product similar to jam but sometimes referred as rose petal jam for marketing purposes. ICAR-CIPHET has developed a process for production of rose petal jam, in few hours without using fruit or vegetable or other flower to address the demand of the consumers.
